Ebbio sits on the Strada del Gallinaio, a short drive from Monteriggioni in the province of Siena. The building is a thirteenth-century farm, restored and still full of its original character — thick stone walls, terracotta floor tiles, and plenty of windows that let the breeze through. In summer the walls keep the interior cool; in winter the same walls hold the heat.
The food is the part the owners write about most. Ingredients are fresh and locally sourced, and most of what reaches the table is grown on the property itself, certified organic. Meals are cooked and eaten on site, and the cooking follows what the land is producing rather than a fixed menu.
The surrounding countryside is the other draw. The house looks out over the Tuscan hills around Monteriggioni, and the pace of the day is set by the farm and the garden rather than a schedule of classes. Guests come here to stay in the house, eat well and spend time outdoors.
The page does not list a daily programme, instructors, class times or excursions, so none are described here. What it does set out is the house, the organic kitchen and the location — enough to know what kind of stay this is.
